INTRODUCTION
AROUND 5000 years ago,when the Aryans first came to India,it was known as Aryavrat.They settled around the Indus valley,which did not receive much rainfall as required for the cultivation of rice,so they started harvesting wheat.The carving and the paintings of that time depict the stone mill which was used for grinding of wheat.

INDIAN food is as varied as it's culture and people.In evsry region,food changes it's flavors and techniques of cooking.As Indian food is influenced by it's religions.customs and traditions,it is not easy to group it like the food of the western word.There cannot be mother gravies like mother sauces and it's derivatives.Each curry has it own gravy.It is a country where the climate conditions are also so varied,that the availability of produce too determines the way the food is cooked.
The strongest influence on Indian food is from ayurveda.Here we are not talking about kebabs and biryani,as this food was brought in by Mughal emperor's who came into India from Persia and Iran.Ayurveda deals with area concerning the healthy and long life of human beings.The origins of ayurveda date back to 1000 BC.
Ayurveda classified Indian food into the following six tastes.
1.Sweet
2.Salty
3.Pungent
4.Bitter
5.Astringent
6.Sour
Indian food has a very simple philosophy--cook what is the season,with love and respect and share the food with people and enjoy life to it's fullest.
